Baked Kumara + Avo Salsa

Officially day 1 of the F45 8 week challenge and this was dinner.

I have to admit, I am struggling with the no sugar thing. My mind is seriously foggy, and energy levels pretty low this afternoon, although they did pick up a little when I saw Stella's face at home time after school!

Now, I put that new mini-oven to the test today, I may have mentioned, (sorry there goes that sugar detox brain fade again) that I got one at the warehouse to save power.

I noticed on our power bill that every time I used the conventional oven, it put a major spike in our usage, also I have very little patience waiting for the thing to heat up!

The mini oven is amazing, and that is what I baked the kumara slices in. It heats up in like 2 minutes, and then you just leave it to do its thing!

This recipe is for 2 people...hopefully you can rope your partner into eating along with you during this plan! Sure helps if the person next to you isn't chowing down on cupcakes and bread buns...

Recipe for 2 people 

1 kumara, washed and sliced into 4 slices, lengthways – around 1 cm thick

1 TBS chipotle, or other hot sauce

¾ cup chopped tomatoes

1 spring onion, finely sliced

½ avocado, cubed

Juice of a ¼ lime

A pinch of salt

½ tsp smoked paprika or paprika flakes

Coriander and hemp seeds or sesame seeds to garnish


Preheat oven to 180 deg C

Place the sliced kumara on an oven tray, brush with coconut oil and bake 20 mins, flip, then bake another 15 mins.

Meanwhile, prepare the salsa with all the remaining ingredients, except the hot sauce.

Take the kumara slices out, spread with the hot sauce and finish with the salsa and garnishes.
