Curry Kale Chips


Day 9...and another stunner here in Auckland!

Really not wanting Summer to end...

I got hold of a 2nd hand dehydrator last week and I just knew that these were going to be the first creation to come out of it.

I am usually a total chip and cracker fiend, but for the first time, I haven't been missing them! These, I think will be my new addiction.

If you don't have a dehydrator, you can do them in your oven on the lowest setting, with the door slightly ajar, and halve the cooking time. Just keep an eye on them so they don't burn!

I did the 9:30 Mkats F45 class today, and as a reward, it always finishes with a 2 minute plank. This once killed me, and I couldn't last the distance...but today, I felt a significant difference and lasted the whole way. Whoop! Progress!

Recipe

8 large organic kale leaves, roughly broken and stems removed

1 TBS cashew butter

1 tsp mild curry powder

1 tsp garlic powder

1 tsp onion powder

1/4 tsp salt

2 tsp nutritional yeast

Crack of black pepper

1/2 tsp turmeric powder 

Method...

Massage all the ingredients into the kale, ensuring it fully coats all the leaves. You might like to wear gloves to avoid staining your fingers or nails polish!

Place on a lined dehydrator tray and place in at 46 degC for 8 hours, until crispy.

Store in an air-tight container ready for snack attacks.
