Salted Nut Butter Protein Bites


Well these babies blew up a storm on my Instagram feed!

Protein always strikes a chord with people...especially on a vegan account! These were so fast to make, no pre-preparation needed and even the kids will love them.

Perfect after-school, after-workout, after-anyting healthy treat x

What you'll need...

1/2 cup plant protein powder

1/2 salted cashews - really key that they are salted to get the full experience!

1 cup almond butter

3 TBS melted coconut oil

1 tsp mushrooms (optional)

1 tsp maca (optional)

4 dates, pitted

1/2 tsp vanilla if you're using the hemp protein

1 1/2 cups melted chocolate

What to do...

Place everything apart from the melted chocolate into a food processor and whiz until you get a nice firm dough. It should stick together when you press it between your fingers.

Roll into bite sized balls and place in the freezer for 30 mins.

Remove and coat in the melted chocolate. Finish with a dusting of salt.

Keep in the fridge for a soft centre and the freezer for a more fudge-like experience.
