Day 20! I spoke to a couple of the other girls at F45 this morning who are doing the challenge, and we all agreed that this week has felt a bit more meh than the first 2.
I think it's because we are getting familiar with the changes, so there's not such a dramatic difference in how we feel.
I'm sure this will improve, given we all stay on track and focused.
This was lunch today, which I shared the process on my instagram stories, and it really is my fave way to have tempeh. Marinated for around 10 mins and fried off nice and crispy in a hot pan...here's what you'll need.
Recipe for 1...
2 cups cauliflower rice, you can create this by placing cauliflower florets in a food processor and pulsing to form a rice texture
1/4 cup cubed tempeh, marinated in...
1 TBS tamari
2 drops liquid smoke
1/4 tsp onion powder
1/4 tsp garlic powder
1/4 tsp freshly cracked black pepper
1/4 tsp bittersweet paprika
Fresh coriander and spring onion to garnish
Start by marinating the tempeh, and leave aside for 10-15 minutes.
Meanwhile, if you haven't made the cauliflower rice, now would be the time to do it.
Heat a little coconut oil in a pan and fry off the tempeh until crispy. Set aside, but don't clean or wipe the pan.
Place the cauliflower rice in the same pan and stir through. Cook for around 7 minutes, or until soft to the bite.
Stir through the coriander and spring onion and serve with the tempeh on top.
