Mexican Chopped "Chicken" Salad

Nearly at the end of week 4! I had my half-way body analysis scan this morning before the Saturday Hollywood (wasn't actually planning to but intrigue got the better of me!). I will share the results tomorrow in my YouTube vlog, which I'm super pleased with! Anyway, back to this dish of flavour. It doesn't get much easier or faster... Recipe for 1... 2 cups chopped salad ingredients - I used a combination of carrot, purple cabbage, sprouts, spring onion, cherry tomatoes, red onion and around 1/4 diced avocado 3 large pieces of Sunfed Chicken Free Chicken, you could also use cubed tofu, or even TVP would work well 2 TBS salsa, I used Tio Pablo Hemp hearts for garnish Method... Moroccan Roast Vege + Cauliflower Rice Bowl

Well, the last couple of days have been pretty gnarly. I got some weird 24 hour tummy bug and my hubby injured his neck. I'm fine now, but it meant a rest day yesterday, and now focused on getting Jasper back to his fighting fit self! Food really is nourishment, and although we had this last week, I'm thinking it will be perfect for dinner tonight. Healing and grounding, with loads of phytonutrients to soothe our souls! Tempeh Singapore Noodles

Day 17 of the F45 8 week challenge, and this morning had the most amazing super-moon that I gazed at on my walk in Cornwall Park. Turns out it was a Virgo moon, which makes sense as to why I found it so mesmerising...as I'm a virgo! And thanks to all the gorgeous links you guys sent me on direct message, with the meaning, and energy of this moon...so fab. On the opposite side of the sky was a stunning sunrise, which I managed to capture for this weeks vlog. So, onto this magic dish! I'm such a noodle fan, and konjacs are my saviour during this challenge. Virtually carb free, no fat, and they are ready in a flash....

10 minute Satay Tofu

This week is going way faster than last week. I can't believe it's Friday already! So for lunch today I wanted no fuss, and of course, as tasty and fast as possible. I grabbed a bag of cauliflower rice at the supermarket (basically just cauliflower that's been blitzed to a rice texture in a food processor), and I thought I'd give this dish a whirl...whilst timing myself! I realise that most people doing the F45 8 week challenge will be in an office job, or have a work destination that they need to be at each day. Mushroom + Courgette Spag Bol

Day 6! Early morning Hollywood F45 session today, and still thinking about how delicious this was last night for dinner. Spag bol use to be my staple as a kid growing up. It was my fave. The telling thing was, that I actually couldn't stand the smell of the raw mince cooking, I wouldn't be in the kitchen until mum had added the dolmio sauce. Anyway, memories are still sweet of mum stirring the pot with love for at least an hour as it simmered away! This is as clean and lean as a spag can get...cos there ain't no spag!
