Vanilla Protein Bounty Bombs

Week 5 and I've kicked it off with these babies! Sugar free, dairy free, wheat, gluten, and nut free!  If you loved Bounty bars as a kid (or adult), these will not only satisfy the craving, but deliver a delectable punch of plant protein and goodness.  Ingredients - makes 12 large bombs 2 cups desiccated coconut, plus a little extra to sprinkle on the choc top 1/4 cup coconut butter, I've used Ceres Organics 100 mls coconut cream 2 TBS vanilla plant protein powder, I used Go Good plant protein 2 tsp coconut oil 1/2 tsp vanilla powder 3 TBS melted, vegan, sugar free chocolate to dip Method Combine all the ingredients in a bowl, apart from the melted chocolate....

Moroccan Roast Vege + Cauliflower Rice Bowl

Well, the last couple of days have been pretty gnarly. I got some weird 24 hour tummy bug and my hubby injured his neck. I'm fine now, but it meant a rest day yesterday, and now focused on getting Jasper back to his fighting fit self! Food really is nourishment, and although we had this last week, I'm thinking it will be perfect for dinner tonight. Healing and grounding, with loads of phytonutrients to soothe our souls! Smokey Tempeh + Cauli Rice Bowl

Day 20! I spoke to a couple of the other girls at F45 this morning who are doing the challenge, and we all agreed that this week has felt a bit more meh than the first 2. I think it's because we are getting familiar with the changes, so there's not such a dramatic difference in how we feel. I'm sure this will improve, given we all stay on track and focused.  This was lunch today, which I shared the process on my instagram stories, and it really is my fave way to have tempeh. Hemp Freedom Breakfast Bowl

I was going to bring you guys the recipe for my lunch today - a curried chickpea nourish bowl - but I actually can't stop thinking about this so here it is. I've named it freedom cos it's free of so much, but instead of lacking, it's a giver! Sugar free, grain free, gluten free, wheat free, guilt free...but full of so much. Essential fats, protein, vitamins, minerals, and antioxidants if you add some dark berries on top. I generally let it soak for around 15 minutes before enjoying it, you could leave it overnight, just add a little more liquid so it's not too thick. Baked Kumara + Avo Salsa

Officially day 1 of the F45 8 week challenge and this was dinner. I have to admit, I am struggling with the no sugar thing. My mind is seriously foggy, and energy levels pretty low this afternoon, although they did pick up a little when I saw Stella's face at home time after school!
