Moroccan Roast Vege + Cauliflower Rice Bowl

Well, the last couple of days have been pretty gnarly. I got some weird 24 hour tummy bug and my hubby injured his neck. I'm fine now, but it meant a rest day yesterday, and now focused on getting Jasper back to his fighting fit self! Food really is nourishment, and although we had this last week, I'm thinking it will be perfect for dinner tonight. Healing and grounding, with loads of phytonutrients to soothe our souls! Smokey Tempeh + Cauli Rice Bowl

Day 20! I spoke to a couple of the other girls at F45 this morning who are doing the challenge, and we all agreed that this week has felt a bit more meh than the first 2. I think it's because we are getting familiar with the changes, so there's not such a dramatic difference in how we feel. I'm sure this will improve, given we all stay on track and focused.  This was lunch today, which I shared the process on my instagram stories, and it really is my fave way to have tempeh. Easy Beets + Broc Bowl

Day 16 and this is as easy as it gets! Great as a leftover too. You could easily add some baked tofu, or lightly pan fried in some fresh ginger and garlic would be super yum! I had my hair done today so feeling fresh as a daisy (a friend spotted my first grey hair in my early 20's so hair dye is always welcome! As a side note, I measured my waist, out of pure curiosity, and I was quite amazed. I knew I had some extra weight to lose around my tum, so I'm feeling so good about this! 10 minute Satay Tofu

This week is going way faster than last week. I can't believe it's Friday already! So for lunch today I wanted no fuss, and of course, as tasty and fast as possible. I grabbed a bag of cauliflower rice at the supermarket (basically just cauliflower that's been blitzed to a rice texture in a food processor), and I thought I'd give this dish a whirl...whilst timing myself! Roast Beet Rounds with Edamame Avo Smash

Day 5 of the F45 8 week challenge and I'm feeling really good today. Sugar cravings officially gone, and I'm not missing pasta, bread and my usual carb fest at all. I roasted the beetroot in my new mini oven, they were done in a flash, and no hot kitchen to have to deal with!
